One ingredient in particular I’m seriously limiting this Ramadan is red meat. As we break our fast so late in the evening, the last thing you want to throw in to an empty stomach is greasy unhealthy fats that won’t be broken down as easily, not forgetting that red meat leaves you very thirsty and that’s just a no can do from me.
Usually when you hear the word burger, you tend to visualise the red meat juicy fatty kind. Thats yummy on a regular day and all but not for Ramadan it aint!
So, I have for you a healthy, flavoursome & delicious recipe (did i mention healthy?) That will surely ease that rumbling tummy. A chickpea & red lentil burger. WAIT don’t leave, trust me you’ll wanna have a bit of this, vegetarian or not!
I remain fascinated by how much flavour is in these patties, they are also so very filling which surprised me too, as i usually find myself hungry a couple hours after a vegetarian meal. The caramelized onions to top it all off is just an amazing addition to the patties, that mix of savoury and sweet, you cant go wrong with this.
WHAT YOU’LL NEED
▪️1 brown onion (sliced)
▪️3 garlic cloves (crushed)
▪️1 tbsp ground turmeric
▪️1 tbsp ground cumin
▪️400g can chickpeas (rinsed, drained)
▪️400g can lentils (rinsed, drained)
▪️70g sunflower seeds
▪️25g coriander leaves
▪️2 eggs (lightly beaten)
▪️120g plain flour
▪️vegetable oil, for frying
▪️4 slices of mozzarella
▪️40g butter (cubed)
▪️2 red onions (thinly sliced)
▪️50g brown sugar

-Heat 2tbsp of olive oil in a frying pan over medium heat. Add onion and cook until soft.
-Add garlic, turmeric and cumin and cook, stirring for 4 minutes or until soft.
-In a food Processor blitz chickpeas, lentils, sunflower seeds, coriander, egg and onion mixture until almost smooth. Transfer to a large bowl.
-Add 2/3 of flour. Stir until well combined.
-Place remaining flour on a plate. Form chickpea mixture into 8 large patties or 12 medium/small patties. Coat in flour.
-Cover base of a frying pan with oil. Heat over medium heat. Cook patties, in batches, for 3 minutes each side or until golden. Top each patty with a slice of mozzarella and allow to melt.
-Meanwhile melt butter in another frying pan over medium heat. Add red onion and cook, stirring for 10 minutes. Add sugar and cook for 1 to 2 minutes or until onions are caramelised.
Serve with coriander, caramelised onions and chips.
