Cheese. You’d be crazy not to love it! my son and I love the stuff. Oozey and grilled, grated and sliced. Mozzarella is one of those cheeses that I tend to add to pizza’s and pasta dishes.
I wanted to use it this time as a sort of side or nibble. Again, as well as being a fan of cheese I occasionally dabble in fried foods too (ugh fried cheese) BUT if I can opt for a healthier baked option, thats the direction ill go in to be honest. Especially when it comes to little tummies.
This recipe is super easy (and cheap) just a little dredging here and there and you let the oven do the rest!
Gooey melted cheese with a crispy crunchy coating, your kids will go wild for this (as will you!)
WHAT YOU’LL NEED
▪️ 50g panko breadcrumbs (golden will do fine too)
▪️ ½ tsp of dried parsley
▪️ ½ tsp paprika
▪️ 1 125g mozzarella ball (cubed)
▪️ 1 large egg (beaten)

-Preheat oven to 220°c.
-Place breadcrumbs, salt and pepper to taste, paprika and parsley in a bowl and beaten egg in another.
-Dip the mozzarella cubes in the egg and then coat with breadcrumb mix.
-Place mozzarella bites on baking paper in a tray and oven bake till golden, around 5mins
Serve with choice of dip, this goes amazing with sweet chilli sauce!
