I don’t think I’ve done a slow cooker recipe on here yet (how dare I, I am a busy mum after all?!) well I sure do have a good one for you! I present to you the mouthwatering Lemon & garlic chicken slowly cooked so it falls apart in its aromatically tasty sauce!
As most slow cooker recipes go, this is easy you just throw the lot in turn the dial and watch the clock go by. Bare in mind this is something you’d prepare 5 hours before dinner time (it’s called slow cooked for a reason). putting fresh lemon wedges in to the mix does wondersssss, to both the flavour and the eating experience. I am one for rich and pungent cooking yet this isn’t overpowering just plain delicious AND easy my friends!
This dish goes finely with rice, chips or crispy cumin & turmeric roast potatoes like I’ve done, you can find the recipe for that here. A dish that will surely please those around the table, big and small (my son LOVED this!).
WHAT YOU’LL NEED
▪️1tsp dried oregano
▪️¼tsp black pepper
▪️2 large chicken breasts (halved to make 4 fillets)
▪️60ml chicken stock (I use the cube and crumble it in to the water)
▪️3tbsp fresh lemon juice & 1 lemon cut in to wedges of 4-6
▪️4 garlic cloves (minced)
▪️4 whole garlic cloves (optional)
▪️1tsp dried parsley

-In a bowl, add oregano, garlic, salt and pepper. Mix together and coat chicken breasts well.
-Melt butter in a large nonstick pan & brown chicken breast halves. Once browned transfer to slow cooker.
-In to the same pan you browned the chicken, pour in the stock & lemon juice, bring to a boil and pour in to the slow cooker with the chicken.
-Add lemon wedges and whole garlic cloves in, Cover slow cooker and cook on low-heat setting for 4-5 hours. Add parsley and baste chicken then cover slow cooker and cook on high-heat setting for a further 30 minutes,or until chicken breasts are tender.
