If you were to ask us, what our favourite cuisine was, we’d both most probably name every single type of cuisine known to man (thats a true foodie you see 🙂 ).
Crazily enough one cuisine I am fond of is Italian (as well as middle eastern, turkish, Mexican, Thai…to name but a few). This particular dish is an Italian-American favourite, and mine!
So easy to prepare you get a few of your favourites in one dish; chicken, cheese & rich tomato sauce. Serve with either bread, potatoes, brocolli or chunky chips, it’s quite a filling meal, one breast per person will do nicely! cut up in little pieces at service makes it alot easier for the kiddies to enjoy too! What you’ll need
▪️ 2 large skinless chicken breast (halved through the middle, making 4 breasts total)
▪️ 2 eggs (beaten)
▪️ 75g breadcrumb
▪️ 75g Parmesan cheese (grated)
▪️ 1 tbsp olive oil
▪️ 2 garlic clove (minced)
▪️ 500ml passata
▪️ 1 tbsp tomato paste
▪️ 1 tsp dried oregano
▪️ 65g ball mozzarella (torn)
-Place the chicken breasts between cling film sheets and bash out with a mallet or rolling pin until they are half their initial thickness.
-Mix breadcrumbs with half the parmesan, dip each breast in egg then the breadcrumbs. Set aside on a plate in the fridge, as its time to make the rich tomato sauce.
-Heat oil and cook garlic for 1 min, then pour in passata, tomato paste and oregano. Season with Salt & Pepper and simmer for 5-10 mins.
-Heat oil in another pan and shallow fry the chicken breasts till its golden and cooked about 3mins each side, then remove.
-Pour 3/4 of the tomato sauce into a shallow ovenproof dish and top with the chicken.
-Scatter over the remaining sauce, then the mozzarella and then the remaining Parmesan and grill for 3-4 mins until the cheese has melted and the sauce is bubbling. Serve with your favourite veggies or carbs or both!
