Oriental Prawn noodles

Don’t let the plain heading fool you, its not just prawn and noodles, but if i’d named this post ‘prawn, peas, green onion, ginger, garlic and egg with noodles’; it just wouldn’t look right. This is one of my personal, quick to rustle up dishes, minus the chilli my son adores it too! all that stringy noodle slipping and slurping who can blame the little guy. Packed with fresh oriental flavours like ginger, green onions and lime, this is truly an understated looking dish but don’t judge a book by its cover (didn’t your mother teach you that?). What you’ll need

(Serves about 3)

▪️ 200g egg noodles

▪️ 25g ginger (grated)

▪️ 3 garlic cloves (chopped)

▪️ 2 red chillies (optional if you like heat)

▪️ 200g frozen peas

▪️ 300g peeled prawns

▪️ 2 eggs (beaten)

▪️ 2 tbsp soy sauce

 ▪️ Juice of 1 lime

▪️ 6 spring onions (sliced)

▪️ handful chopped coriander

Method

– Cook the noodles following pack instructions, drain, run cold water over it and set aside.

– Heat some oil in a wok. Add the ginger, garlic and chilli (optional), and cook for 2-3 mins. Add the peas and prawns, and cook for another 3 mins until the prawns are pink and cooked through. Pour in the eggs, stirring continuously till well combined.

– Add the noodles and cook till it warms up again. Stir in the soy, lime juice and spring onions, sprinkle with coriander and serve with the lime wedges.
