Who doesn’t love a quick, easy and delicious meal with minimum clean up? I for one find them great for those busy weeknights or just generally, when I’m lazy.
I especially opt for a one pan/pot meal when I just want to put my feet up once I’ve finished my meal as apposed to washing up endless amounts of pot, pans, plates and all different type of utensils.
This recipe has many family favourites in one dish, your chops, roast spuds and colourful veggies! Not forgetting amazing mouth watering flavour.
What you’ll need
▪8 lamb chops
▪1kg potatoes, (chunks)
▪1tbsp dried rosemary
▪4 whole garlic cloves
▪1 small onion (wedges)
▪1 yellow bell pepper (strips)
▪250g cherry tomatoes
▪1 tbsp balsamic vinegar
-Preheat oven to 220C. In a an oven tray pour about 3 tbsp of olive oil and place in hot oven for about 10mins. Carefully Place lamb in the heated oil followed by the potatoes, rosemary, garlic and onion. Spread all ingredients out evenly and put tray back in the oven to cook for 20 minutes.
-Now add the yellow pepper, cherry tomatoes and drizzle all over with balsamic vinegar, turn you chops and put it all back in the oven for a further 15 minutes, till tomatoes soften, peppers & potatoes begin to crispen and your meat is cooked.
Plate up leaving the lamb chops last, in order for them to rest before you devour them!
