Chicken & garlic sausage Jambalaya 

I’m back again with the garlic sausage (halal alternative for chorizo). We’ve had them grilled on skewers, now we’ve tossed it together with chicken in this yummy one pan meal. Great for when you barely have time to cook and just want to sit & feed your hungry family.

What you’ll need

▪️ 1 tbsp olive oil 

▪️ 2 chicken breast (chunksl

▪️ 1 onion (diced) 

▪️ 1 red pepper (sliced thinly) 

▪️ 2 garlic cloves (minced) 

▪️ 1  halal garlic sausage or more if desired (sliced)
▪️ 1 tbsp Cajun seasoning

▪️ 250g of rice (I used basmati) 

▪️ 400g chopped tomatoes 

▪️ 350ml chicken stock

▪️ 150-250ml of water depending on rice

▪1 cup of frozen peas (more of you like)

Method

– Heat oil in a large frying pan with a lid. Brown the chicken til golden. Remove and set aside.

-throw in the onion and cook til soft then add the peppers, garlic, sausage & Cajun seasoning, cook for an extra 5 mins. 

-Stir the chicken back in along with the rice. Add the tomatoes and stock. Cover and simmer for 30 mins (depending on type of rice used)  until the rice is tender.

-Add peas in the last 6 Minutes of cooking.

*If necessary add more water to ensure cooking of rice

Perfect.  You’re all set to gobble it all down with some Greek yogurt, you won’t regret it!
