Seafood Trio (Stir fried squid in oyster sauce, Squid and prawn tempura)

(Serves 4)


you’ll need

▪️ 3 medium squid tubes (score it into grid slices and cut in to squares)

▪️ 1 white onion

▪️ 2 spring onions

▪️ 2 leeks

▪️ 1 celery

▪️ 1 bell pepper

▪️ Palm sized ginger
(Slice all veg into thin strips)

▪️ 1-2 tsp Minced garlic

▪️ 3 Tbsp oyster sauce

▪️ 2 Tbsp sesame oil

▪️ 1 Tbsp soy sauce

▪️ 1 tsp sugar

▪️ 1 tsp white pepper

▪️ 1 Tbsp Cornflour

▪️ 2 Tbsp water

-On medium heat fry the ginger, garlic and white onion in oil until softened

-Add the rest of the veg to the wok except spring onion and soften

-In a separate pan boil water and add squid for 1min (till it starts to curl) remove and add to cold water immediately. Add squid to the wok and stir

-In a separate bowl add the oyster sauce, sesame oil, sugar, soy sauce and white pepper and mix, add this mixture to the stir fry along with the spring onions

-Last but not least mix in some cornflour diluted in water and mix the stir fry until it thickens

serve immediatley



you’ll need

▪️ 300g prawns

▪️ Juice of a lemon

▪️ ½ Tsp chilli powder

▪️ Salt to taste

▪️ 1 tsp pepper

▪️ 1 egg (beaten)

▪️ ½ cup of flour

-Marinate prawns in some lemon juice, chilli powder, salt and pepper

– add the prawns in to the egg wash and coat with flour

-Deep fry the prawns in oil till golden

Tada! serve with lemon wedges for extra yumminess 😋



You’ll need

▪️ 3 squid tubes (cut in to rings)

▪️ ½ cup of flour

▪️ 2 Tbsp Oregano

▪️ Salt

-In a bowl combine flour, oregano and salt

-Add the squid into the mixture and evenly coat

-Deep fry for 2 minutes on medium-high heat till crispy

Again serve with lemon wedges
