What you’ll need
▪️4 tbsp oil
▪️2 large onions (chopped)
▪️3 cloves of garlic (crushed)
▪️1 can of chopped tomatoes
▪️3 tbsp tomato puree
▪️1tsp cumin
▪️half a tsp of all purpose, black pepper, nutmeg & salt (chilli powder if you like spice)
▪️Bunch of coriander, parsley and dill chopped (reserve stalks for bottom of pot when you come to cook your vine leaves )
▪️3 cups of rice (preferably long grain)
Method
-Heat oil in saucepan on medium heat and fry onion & garlic till golden brown
-Add chopped tomatoes, puree and all seasonings, cover & bring to a boil till sauce thickens or oil rises to the surface.
-Add coriander, parsley and dill and mix well
-Add rice, cover and simmer for 5minutes on low heat.
Your vine leaves/dolma stuffing is ready to be used. You can use this mix in vine leaves, courgettes, cabbage leaves, baby aubergine and bell peppers!
